The Zaxbys are a very, very, small band of Chicago’s finest chefs.
The owners of Zax, one of the city’s oldest restaurants, are known for their signature salads and chicken wings, and they also specialize in vegan fare like salads and grilled chicken sandwiches.
But they also have an eclectic menu of vegan options, which includes dishes like zoodles and grilled cheese stuffed with tofu and avocado, as well as salads and tofu scramble sandwiches with chickpeas, black beans, avocado, and cucumber.
That’s not to mention their homemade baked goods, such as their zucchini bakes and zucchinis.
In their new book Zax by the Numbers, they take you behind the scenes of their amazing, wildly delicious menu, including the salad-and-movie-themed movie in the video above.
The menu below has the salad, as it appears in the book.
And the meal itself has a number of ingredients, including: 2 chicken breasts, 1/2 a cucumber, 2 zucchi, a carrot, a green onion, 1 onion, and a small can of tomato sauce.

Chicken Breast Salad: 2 breasts of chicken breast, 1 cucumber and 1 green onion.
The chicken breast has been seasoned with salt and pepper.
Zucchini Salad: 1 cup of zucichini, a yellow zucchinini, and 1/4 cup of white wine vinegar.
Shredded Zoodles: 1/3 cup of shredded zucchee, 1 1/8 cup of tomato juice, and 2 tablespoons of soy sauce.
Salad: Chicken, lettuce, avocado and a tomato.
It’s packed with veggies, but it also contains some meat, which is good, as the chicken has been ground up and seasoned with garlic, chili powder, and salt.
Vegan Zoodle: 1 avocado, a zuceggplant, and lettuce.
This one comes with a vegan version of the sauce.
Vegan Chicken: 1 chicken breast with zucumber, green onion and 1 cup diced carrots.
Vegan Eggplant: 1 eggplant, 1 red onion, a small red pepper, 1 garlic clove, and pepper sauce.
Vegan Tomato Salad: Zucchini, cucumber zucceler, and tomato sauce 8 ounces of tomato.
Vegan Cheese Slice: 1 tomato, a little cheese, and zesty sour cream.
Vegan BBQ Beef: 2 pork ribs, 1 cup smoked barbecue sauce, 1 tablespoon of smoked garlic, 1 teaspoon of pepper, and green onions.
Vegan Chili: 1 1-pound chuck roast with black beans and 1 tablespoon black beans.
Vegan Poblano Nacho: 1 small poblano chile, 1 avocado and 1 can of salsa verde.
Vegan Cheesy Chicken Sandwich: 2 grilled chicken breast slices, a salad, and homemade baked beans.

Chicken and Avocado Salad: 4 chicken breast halves, 2 avocado halves, and 3 tablespoons of olive oil.

(A little more than a cup of avocado and 4 ounces fresh green onion.)
Vegan Chipotle Salsa Verde.
(2 ounces of sour cream, 1 to 2 tablespoons sour cream and 1 to 1 1 teaspoon lime juice.)
Avacado Sauce: 1 can, 2 tablespoons tomato sauce, and one can of crushed red pepper.
Vegan Ranch Sauce: 4 cups of ranch dressing, 1.5 to 2 teaspoons vinegar, 1-1/2 tablespoons lemon juice, salt, and black pepper.
Avocados: 2 ounces of avocados.
Vegan Red Pepper and Salsa: 1 to 4 teaspoons red pepper flakes and 1 teaspoon dried oregano.
Vegan Tofu Chili: 3 to 4 tablespoons tofu, 2 to 3 tablespoons soy sauce, 2 teaspoons garlic powder, salt and black spiciness.
